Chicken Biryani
Ingredients
Basmati rice 4cups
Chicken 1kg
Onions Sliced 1/2(1cup fry onions)
Seed less Tomato Sliced 1
Green Chilli’s 6
Ginger Ginger Paste 1 tbsp
Oil 3tbsp
Chilli Powder 1tbps
Turmeric Powder 1tsp
Salt 1/2tbs
Garam Masala Powder 1tsp(whole masala all 50g nutmeg 1/4and nutmeg Leaf 1 leaf)
Lemon Juice 3tbs(1tbs for cooking rice)
Mint and Coriander leaves 1 cup
Saffron One Pinch Mix With Water
Curd 1 /3cup
Whole Garam Masala(for rice cooking)
Cinnamon Sticks 2
Cardamom 2
Black Cumin 1 tbsp
Laurel leaf 2
Clove 4
Black Pepper 3
Patankar pool 2
Method
Take a wide handi and add washed chicken (wash it thoroughly.)
Now keep washed chicken a side in incline way to remove excess water.
Now remove excess water from bowl .
Soak rice for 30min in warm water.
Take a pan add oil for deep fry the onions.
Now start adding masala to washed chicken red chilli powder, turmeric powder, salt, whole Garam Masala, ginger garlic paste, (chilli and tomato and blend it add) mix it well marinate for 30min add onions all so
After 30min add lemon juice, curd , coriander and mint leaves, and deep fried onions, oil ,mix it well marinate for 15mins.
Take a bowl add water ,add whole Garam Masala, mint and coriander, lemon juice, wait up to its boil.
When water starts boiling then add soaked rice in boiling water.
Now add 30% cooked rice to marination.
Next add 50% cooked rice to marination.
Next add rest of cooked rice to marination .
Now add coriander leaves , fried onions on the top most layers and kesar colour .
Cover it with a lid(air should not escape formr the handi ) and DUM it for 45mins.
After 45min rest it a side for 5 min to cool down.
Serve it in plate and enjoy it.
